Fava bean and beetroot hummus

To make this hearty, richly flavored spread,
You will need:
- 250 g of dried, peeled fava beans
- 1 medium-sized beetroot
- ¾ lime juice
- 1 teaspoon tahini
- a pinch of paprika powder
- 1.5 tablespoons of olive oil
- 1 clove of garlic
- salt and pepper to taste
- water as needed
Preparation
Wash the fava beans and let them soak in water overnight. Boil water in a pot, add a pinch of salt, add fava beans and boil until soft. When ready, drain and rinse in cold water. Put all the ingredients, except water, in a food processor and blend until a homogeneous mass is obtained. If it does not beat well, add a little water. A thick creamy mass should be obtained.
