Falafel from fava beans

To prepare this product of exotic taste and smell,
You will need:
- 300 g of shelled fava beans
- 1.5 cloves of garlic
- 1 teaspoon cumin seeds
- a pinch of cayenne pepper
- a pinch of black pepper
- a pinch of paprika powder
- 16 g of Turkish pea flour (and a handful of flour for rolling the balls)
- salt to taste
- a handful of spinach
- a handful of parsley
Preparation
The flour is thoroughly washed from the peeled fava beans, soaked in water and left to swell overnight. Boil water in a pot, add a pinch of salt, add fava beans and boil until soft. When done, drain and rinse in cold water. Put the fava beans, spices, garlic, spinach and parsley in a food processor and grind until you get a homogeneous mass. Add the pea flour and mix thoroughly. Make balls from the mass, roll in turkey pea flour and fry for nine minutes.
We recommend lightly toasting and grinding the cumin seeds for an even richer flavor.
