You will need
- Choose your favorite vegetables – we used peppers, asparagus, zucchini, broccoli
- Pupuchi flour
- Mini beans “Pupuchi” without salt/with salt or with piri-piri and cream
- 1 – 2 eggs
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
Choose your favorite vegetables – we used peppers, asparagus, zucchini, broccoli. Cut all the vegetables into the desired size and shape. Blend the Pupuchi flour – pour a large handful of roasted Mini beans “Pupuchi” without salt/with salt or with piri-piri and cream into the blender and blend until you get flour of the desired coarseness. We used both fine and coarse flour. Beat an egg or two (it depends on how many vegetables you can tolerate), add salt and pepper to taste. Heat oil suitable for frying in a deep pan. The vegetables are dipped in egg, then in flour, and to get a crispier crust, repeat this again. Place in a pan and fry until the vegetable crust is golden.
Simple Cream Sauce:
Add fresh garlic, grated hard cheese, greens, 1 teaspoon to the sour cream. lemon or lime juice, salt and pepper to taste. Everything is mixed.
